Coconut Lime Biscuits


Coconut Lime Biscuits

1 C S.R flour

1 ½ tsp cornflour

1 C desiccated coconut

1 egg, lightly beaten

1 cup sugar

125 g butter, melted

1 lime, grated zest +2 tsp of the juice

  • Preheat oven 150 o and grease 2 oven trays
  • Mix all ingredients together
  • Roll into walnut sized balls
  • Place, well-spaced onto trays to allow for spreading
  • Bake for 12 mins or until golden
  • Cool on rack before storing in an air tight container
  • Serve with a chilled Wobbly Boot Sauvignon Blanc
